The California School of Culinary Arts offers three key full time programs of study, each leading to the Le Cordon Bleu diploma culinary arts qualification: Culinary Arts program, Patisserie and Baking program and the Hospitality and Restaurant Management program. The Patisserie and Baking diploma culinary arts program is also offered on a part time basis.
To supplement its three key Le Cordon Bleu diploma culinary arts courses, the School also offers a whole range of continuing education courses, that take place on Saturdays, twice monthly with each concentrating on a different type of food. To supplement its diploma culinary arts courses, the California School of Culinary Arts boasts its Bistro Five Sixty One restaurant. This restaurant is, essentially, run by the students, with instructors close on hand to help if needed. The students prepare, cook and attend to front of house management, too, giving them valuable real world commercial restaurant experience as an integral part of their diploma culinary arts study program. The menu at the restaurant is ever changing, and reflects the creativity and skills of the students as they progress through their education. Many providers of diploma culinary arts courses are now operating such student operated and run restaurants to supplement their classroom learning with experience of the real pressures they will be subject to within a live restaurant environment, pressures that cannot be replicated in the classroom or study kitchen.
The Five Sixty One restaurant has an open kitchen that allows diners to see the students in action as they prepare and cook a variety of dishes. Thursdays and Fridays see the Five Sixty One's doors open for the weekly Chef's Tasting Menu, available every Thursday and Friday. The restaurant opens for both lunch and dinner and bookings are often recommended as the high quality of food makes it a popular choice for local diners.
